This rare monster is not particularly hard to kill. It has the standard basic attacks of a mud golem and its total amount of hitpoints are not immense.
If you cannot find this rare monster in the area, it is likely that it is on a respawn cooldown, which could take a few hours, so then you can either come back later or wait.
